The whakaruru has tiered leather seating at the forefront, and terraced standing room along the back. It is adorned with native plants, natural fibres and manuka fencing. This new area ensures all guests are able to view the lifting of the hangi meal. Staff members carefully scrape the earth away, pull back the hessian sacks, and through the billowing steam - reveal the sumptuous hangi meal that has been cooking for more than 3 hours beneath the ground on hot stones. With plenty of photo opportunities, the hangi baskets, laden with piping hot kumara, potatoes, carrots, stuffing, moist chicken and succulent lamb are pulled from the pit.
